I wasn’t expecting to create this recipe. My initial plan was simply to harvest these wild gems for my own enjoyment. However, the morning after foraging for my bounty, I woke up inspired to share this cherished harvest. So I dreamt up these wild blackberry crêpes to share with you.

LIVING WITH THE SEASONS

Living in Greece—specifically on an island—means fresh produce is highly seasonal. We only have access to fruits and vegetables for the short time when they are locally in season. Unlike in the U.S., where I grew up, you won’t find strawberries outside of spring in Greece, for example. Adjusting to this hyper-seasonal availability was a challenge when I first moved here. But now, the fleeting nature of hyper seasonality has given me an even deeper appreciation for creating recipes with seasonal ingredients, like these wild blackberry crêpes.

Here on Skopelos, not even frozen fruit is available in stores. So, when I found myself craving berries the other day, I took an evening walk to my little-known wild blackberry haven on the island. To my delight, I discovered a motherlode of wild blackberries (βατόμουρα—vatómoura in Greek) waiting to be harvested. These dark gems grow abundantly here, and in many places around the world. Though often considered a nuisance due to their thorns and invasive nature, with enough grit and determination, braving the brambles yields a reward well worth the effort.

WILD BERRY BENEFITS

Wild blackberries are a nutrient-packed superfood that offer a range of health benefits. Bursting with antioxidants, these berries are rich in vitamin C, vitamin K, and fiber. Supporting immune health, bone strength, and digestive wellness. The deep, intense flavor of wild blackberries is not only a treat for the senses but also a sign of their high concentration of anthocyanins. Making them perfect for these delightful wild blackberry crêpes.

Compared to conventionally grown varieties, wild blackberries tend to have a more intense flavor and higher levels of antioxidants and polyphenols due to their natural growing conditions. Since they grow without human intervention, in nutrient-dense soils, they are richer in nutrients and are naturally free from pesticides and chemical fertilizers. Even more of a reason to venture out for a walk and forage wild berries if you have the opportunity.

MAKING WILD BLACKBERRY CRÊPES

FIRST, THE CRÊPES – you can use any recipe that you love for crêpes, whether it be the classic French style (which is what I use). Or you can use a gluten-free version, or even a vegan version. And if you have never tried making crêpes at home, I encourage you to do so! As long as you have a nice crêpe pan, or a good shallow non-stick pan, they are really simple to make. I recommend making the crêpe batter ahead of time for the best results. Mixing up the batter the day (or evening) before & keeping it in the refrigerator makes homemade crêpes even easier to whip up.

SECOND, THE YOGURT – I find that adding a rich, creamy element to the crepes is the perfect compliment for the wild blackberries and honey. I use Greek yogurt because I live in Greece and that is what is most widely available here. But feel free to substitute with sour cream, creme fraîche, or even your favorite non-dairy yogurt.

THIRD, THE HONEY – I feel that wild blackberries and honey are the perfect pairing. I used Greek fir honey in this recipe, but any natural honey would be lovely here. For substitutes, maple syrup or agave would be my first choices.

FINALLY, THE BERRIES & MINT – wild blackberries and raspberries are the most prolific wild berries in the world. And they are definitely worth seeking out if you have the opportunity. Garnishing with a touch of fresh mint adds a gentle, but lovely herbaceous flavor to these wild blackberry crêpes.

WILD BLACKBERRY CRÊPES

Ingredients

FOR THE CRÊPE BATTER

2 eggs

15g (1 tbsp) melted butter, plus extra for cooking

240g (1 cup) milk

1/4 cup water

125g (1 cup) all purpose flour

1 tbsp sugar

pinch of salt

FOR SERVING:

Greek yogurt (or substitute with crème fraîche, sour cream, or mascarpone)

honey

fresh mint


Instructions

FOR THE CRÊPE BATTER:

  • Add all the liquid ingredients for the crepe batter into a blender. Follow with all of the dry ingredients. 
  • Blend on low until the batter is well mixed and very smooth.
  • Pour the batter into a bowl or large measuring cup, cover and refrigerate for at least 1 hour and up to 48 hours.

 

MAKING THE CRÊPES:

  • Heat a large 8-9 inch skillet or crepe pan over medium heat. Brush the skillet with a bit of melted butter. Pour 1/3 cup of the crêpe batter into the pan while you tilt and rotate the pan with your other hand in order to spread the batter evenly.
  • Cook the first side for about 1 – 2 minutes or until the top looks dry and the edges start to lift away from the pan. 
  • Flip the crêpe & cook the other side. The second side will only take about 30 seconds or so. Both sides should be nice & golden. 
  • Remove cooked crêpe to a plate and continue to cook the additional crêpes, stacking one on top of the other.
  • Crêpes can be made 1 day in advance, stacked, covered with plastic wrap (on a plate) and refrigerated until ready to serve. Re-warm in a heated pan before serving.

 

TO SERVE:

  • Fold each crêpe into triangles, by first folding in half and then in half again. 
  • Atop each crêpe, spread a dollop of Greek yogurt, followed by a generous drizzle of honey, a handful of wild blackberries and a touch of fresh mint. Enjoy!

    Can the sugar with substituted with anything ? Maple syrup or honey ?

      Yes! You can absolutely substitute with maple syrup or honey, just pull back the water to 3 tbsp if you do so!
