Grilling season has officially started and along with it has come some pretty hot weather for us here in Northern California. The heat combined with longer days means we are typically eating dinner later in the day, so we have found ourselves craving lighter fare. Turning to my hubby’s Greek culture for inspiration, I wanted to grill up a refreshing Greek style burger that we could enjoy all summer long. Grilled halloumi burgers built on Foldit wraps are what we dreamt up and they are so good, I know we will literally be eating these all summer long!
Halloumi cheese is a Greek sheep’s milk cheese that hails from the island of Cyprus. Unlike most cheeses, halloumi is meant to be cooked before eating. This semi-hard cheese has a high melting point that makes it perfect for frying or grilling. Once grilled, the halloumi cooks up with a crispy exterior and a warm & soft interior, making it a great option for a vegetarian burger. Tzatziki is the traditional Greek cucumber, garlic & yogurt sauce that is good on so many things but is really perfect for these halloumi burgers. Cool and refreshing, tzatziki combines wonderfully with the hot, crisp halloumi. Some lettuce, tomato & pickled red onions are the ideal produce companions for these Greek style burgers.
But a burger’s contents cannot stand alone, it is the vehicle that holds all of the goodness within that makes a burger a burger. For our grilled halloumi burgers, we used Foldit artisan flatbreads for our buns. Not only are the Foldits nice and thin, the two sides are connected allowing them to fold over your burger contents and create a back-stop that holds your burger together perfectly! That built-in backstop is also super helpful in preventing the mess that is typically involved with eating a burger – making these especially great for cook-outs & barbecues. These Foldout flatbreads are a genius concept and we love how light they are compared to conventional buns.
If you are looking for something refreshing to grill up all season long, then you really do not need to look any further. We like them so much, we have eaten these grilled halloumi burgers 3 times in the last week! Not to mention, they can be ready in only 15 minutes! Making them fast food you can feel really good about eating!

- Total Time: 15 minutes
- Yield: 6 burgers 1x
Ingredients
- 1 package Foldit artisan flatbreads (we used Traditional White in this recipe, but any variety of Foldit will taste great)
- (2) 7oz packages of halloumi cheese (12 slices)
- 16oz tzatziki
- lettuce
- sliced tomatoes
- pickled red onions
Instructions
- Start by heating your grill or a grill pan – once heated, grease the grates or the pan well with oil
- Heat the Foldits on the grill until hot, reserve them on a plate covered with a towel to keep them warm
- Place the halloumi slices on the grill & cook until nicely browned on each side, approximately 3-5 minutes per side
- Spread each Foldit with about 1/3 cup of tzatziki, add lettuce leaves, tomato slices, grilled halloumi & pickled red onions
- Fold & serve

who would of EVER thought that you could have a greek burger, let alone a vegetarian greek burger made from one of the BEST greek cheeses from the greek island of cyprus, and it turns into a greek grilled halloumi burger?!?!?!?
